Pumpkin Pie Smoothie

Ingredients:

1 can (15 oz. size) pure pumpkin, chilled
1 can (12 oz. size) evaporated milk, chilled
1 container (8 oz. size) vanilla yogurt
1/4 cup granulated sugar
1/4 teaspoon pumpkin pie spice
1 pint whipping cream, whipped into soft peaks

Directions:
Combine pumpkin, evaporated milk, yogurt, sugar and pumpkin pie spice in blender; cover and blend until mixture is smooth. Top with whipped cream and sprinkle with additional pumpkin pie spice.

Boolicious Smoothies

For a yummy Halloween treat try this delicious smoothie.  

Ingredients:

2 cups orange juice
2 cups milk
2 pint orange sherbet
4 ripe bananas
2 cups whipped topping
miniature chocolate chips

Instructions:

Blend together orange juice, milk, sherbert and bananas until smooooooth.  Pour into party glasses.  Fill a decorator pastry bag with whipped topping (or fill a ziploc and cut off a corner tip) and squeeze out ghost like shapes on top of each drink just before serving.  Use chocolate chips for eyes.

Smoothies – A Great Way To Get 5 A Day

We all know the importance of eating a variety of fresh fruits and vegetables.  Unfortunately, with our busy lifestyles it's not always so easy.  That's where smoothies come in.  Delicious and nutritious smoothies can be our secret weapon to including extra fruits and veggies in our diet.

Here are some yummy smoothie combinations that are great for breakfast or any time of the day.  Simply throw all ingredients in the blender and blend on high for 1 to 2 minutes. 

Bananarama – 1 banana, 1/2 cup vanilla yogurt, dash of milk

Mango Mania – 1 mango (cut and pitted), 1/4 cup orange juice

Peach Medley – 1 peach (cut and pitted), 1 banana, 1/4 cup orange juice

Berry Surprise – 1/2 cup strawberries, 1/4 cup blueberries, 1/4 cup raspberries, ¼ cup of milk

Strawberry Ice – 1 cup strawberries, 1 cup orange juice, I cup crushed ice

Honey melon – 1 cup chopped honey dew lemon pieces, 1/4 cup apple juice, tablespoon honey. 

Banana Boost – 1 banana, 1/4 shredded wheat cereal (or other high fiber cereal), 1/4 cup milk.  A great way to get extra fiber and vitamins into your child's diet.

And if it's hot outside why not try smoothie popsicles.  They may a great alternative to sugary ice cream and are a delicious summer treat.  For a creamier consistency try adding 1/4 cup yogurt of your choice to the recipes above and pour the smoothie mixture into popsicle molds.  If you don't have popsicle molds you can use paper cups or even ice cube trays.  Fill cups or tray and when half frozen and slushy insert popsicle sticks and leave until fully frozen.

You don't have to stick to the recipes above, just about any of your favorite fruit combinations will taste delicious in a homemade smoothie.  It's also a great way to let kids get involved in the kitchen.  Let them choose their favorite fruits and let them help you peel and chop them up (according to their age of course).  They can also pour liquid ingredients into measuring cups.

Smoothies are not only a great way to eat more fruit, they're also easy to prepare and best of all DELICIOUS!

Lime Bliss Smoothie

    3 tablespoons fresh lime juice                                 
    1 cup diced bananas                                            
    3/4 cup Häagen-Dazs Coconut Gelato or favorite vanilla ice cream

Place the lime juice, banana, and gelato in a blender and blend on low speed until the mixture is blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour the smoothie into a wine goblet or glass and garnish with a Lemon Pirouette (see Glorious Garnish), if desired.

Peanut Butter Banana Soy Smoothie

    1 cup soy milk                                                 
    1 banana                                                       
    1 tablespoon peanut butter                                     
    3 ice cubes                                                    

Blend Together and Serve

Shake Your Fruity Smoothie

1/2 cup 2% milk                                               
2 tablespoons peach nectar                                    
1 1/2 tablespoons honey                                       
1 cup blueberries                                             
1/2 cup diced sweet cherries                                  
1/2 cup blueberry lowfat frozen yogurt                        

Place the milk, peach nectar, honey, blueberries, cherries, and yogurt in a blender and mix on low speed until the mixture is blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour the smoothie into a glass and garnish with Berries on a Skewer (see Glorious Garnish), if desired.

Strawberry Blackberry Peach Smoothie

2/3 cup peach nectar
1 1/2 tablespoons honey
1 cup diced peaches
1/2 cup diced strawberries
1/2 cup blackberries

Place the peach nectar, honey, peach, strawberries, and blackberries in a blender and mix on low speed until the mixture is blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour the smoothie into a glass and garnish the rim with a Strawberry, if desired.

Baked Apple Pie Smoothie

What a yummy fall treat! This takes a bit more time since you have to bake the apples, but it is completely worth it!

2 tablespoons firmly packed dark brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
2 large apples, preferably McIntosh, peeled
1 tablespoon butter, cut into 2 pats
2 tablespoons maple syrup
1 cup apple juice
1/2 cup apple pie or favorite vanilla ice cream Cinnamon Pirouette Cookies (optional)

Preheat the oven to 400°F. Line a shallow bowl with nonstick aluminum foil. Set aside.

Combine the brown sugar, cinnamon, nutmeg, and cloves in a small bowl and blend well.

Remove the stems from the top of each apple. Using an apple corer, remove the cores, but do not cut through the bottoms. Place the apples in a baking dish. Fill each hole with the brown sugar mixture and butter, dividing evenly. Spoon the maple syrup on top. Pour 1/4 of the cup apple juice into the baking dish.

Bake the apples for 30 to 35 minutes, or until tender, basting the apples every 5 to 8 minutes. Remove the baking dish from the oven and place it on a cooling rack. Allow the baked apples and juice to come to room temperature. When the baked apples and juice are cool, place them in the prepared bowl and freeze for 1 hour or more.

When you are ready to make the smoothie, place the remaining 3/4 cup apple juice, the baked apples and juice, and ice cream in a blender and mix by using the on/off pulse function until the ingredients are mostly blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour the smoothie into a glass and garnish with a Cinnamon Pirouette
