Tomato Smoothie

This isn’t a recipe for the faint of heart. You have to love tomatoes to enjoy this one!

Ingredients:

2 tomatoes (chopped then frozen)
1 cup tomato juice
juice of 1/2 lemon
3 basil leaves

Directions:

In a Vita-Mix blender, place the frozen tomatoes and pour in the tomato juice, lemon juice and basil leaves.

Blend on high until smooth.

Serve immediately and enjoy!

Fruit Paradise Smoothie

Ingredients:

1 large slice of watermelon (cut into cubes)
1 apple (cored and sliced into 4)
1 banana (peeled and sliced into 4)
2 scoops of vanilla ice-cream
5 – 10 cubes of ice

Directions:

In a Vita-Mix blender, blend the apple, banana and watermelon for approximately 30 seconds.

Take this liquid (from the apple, banana & watermelon) and pour into a cup and set aside.

Now add the ice and crush it – about 30 seconds.

Pour the liquid that you sat aside back into the Vita-Mix blender with the ice and puree for 20 seconds.

Pour into glasses, add a scoop of vanilla ice cream and enjoy!

Four Fruits Smoothie

The back to school morning rush has started. Smoothies are a quick way to make sure your kids are getting the most important (and lots of nutrition) meal of the day – breakfast!

Ingredients:

1 large slice cantaloupe
2 ounces raspberries
1 large slice watermelon
1 large slice muskmelon
1/2 cup plain yogurt
5 ounces cranberry juice

Directions:

In a Vita-Mix blender, add the cantaloupe, watermelon and muskmelon followed by the raspberries then the cranberry juice and yogurt.

Blend on high for 30 seconds to one minute or until desired consistency is reached.

Berry Avocado Smoothie

This recipe makes enough for 1-2 servings.

Ingredients:

1 avocado, peeled and pitted
1 tablespoon cashews
1 tablespoon honey
1 cup water
1/2 cup blueberries, frozen
5 ice cubes

Directions:

In a Vita-Mix blender, blend the avocado, cashews, honey, water, blueberries, and ice together until smooth.

Apples and Avocado Smoothie

Ingredients:

1 ripe avocado
2 apples, cored, skin on (Granny Smith apples work best)
1/2 cup apple juice
3 sprigs mint leaves
1 teaspoon lime juice
1/2 cup ice

Directions:

In a Vita-Mix blender, place all ingredients.

Blend on high until smooth.

Serve immediately.

Pineapple Avocado Smoothie

Pineapple and avocado are two things I can’t imagine eating together! Leave a comment letting me know what you think of this recipe.

Ingredients:

2 cups fresh pineapple
1 large ripe avocado
1 1/2 cups orange juice
2 teaspoons lime juice
1 tablespoon honey
1/4 teaspoon coconut meat
5 ice cubes

Directions:

In a Vita-Mix blender, add all ingredients and blend on high until smooth or desired consistency is reached.

Serve immediately.

Raw Almond Milk Smoothie

Start your morning off with a glass of this filling, refreshing and delicious smoothie. Remember – breakfast is the most important meal of the day!

Ingredients:

1/4 cup almonds
1 1/4 cups water
1 banana (frozen)
1/2 cup strawberries
1/4 cup frozen blueberries, unthawed
1/4 cup frozen blackberries, unthawed
1/4 cup frozen raspberries, unthawed
1/4 cup frozen peaches, unthawed
1/4 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 tablespoon honey

Directions:

Make the almond milk first. Soak the 1/4 cup of almonds in water overnight, enough to cover them completely. Drain and rinse in the morning. Put them in a Vita-mix or blender (they’ll have expanded while soaking and that’s ok) with 1 and 1/4 cups of water and run it on high until smooth. Strain.

Then just toss the almond milk with the rest of the ingredients in a Vita-mix and blend on high for 30 seconds using the tamper if it won’t run smooth. Or, use a blender which will take a bit longer but will work just as well as long as you stop it and press down anything that gets stuck and then run it again.

Pear & Avocado Smoothie

Ingredients:

1/2 of an avocado
1 pear (chopped)
1 teaspoon lemon juice
2 teaspoons honey
1/2 cup green grapes

Directions:

In a Vita-Mix blender, blend all ingredients on high for two minutes or until desired consistency is reached.

Serve immediately.

Note: You can garnish with chopped pecans if you wish.

Cool Melon Smoothie

Summer is winding down and what better way to bring summer to an end than with a summertime favorite – watermelon.

Ingredients:

3 cups watermelon (seedless works best)
1/2 cup yogurt
1 tablespoon sugar
1/2 teaspoon ground ginger
1/8 teaspoon almond extract
1 cup ice

Directions:

In a Vita-Mix blender, add all ingredients and blend for 30 seconds or until desired consistency is reached.

Banana Berry Avocado Smoothie

Ingredients:

1 frozen bananas
5 frozen strawberries
1 avocado
Splash milk
Pinch cinnamon (or allspice)

Directions:

In a Vita-Mix blender, add all ingredients and blend on high until smooth or desired consistency is reached.

Serve immediately.
